And what pets do you use in PvE and RvR, and why?
The Cabalists class defining ability has to be the pets, known as Simlacrums (Sims for short). Each pet has very different abilities :
Amber Sim – this is your first pet, gained when you first become a Cabalist. You’ll be seeing allot of this guy throughout your career. Amber has the highest hitpoints of all 5 sims and has a handy stun proc which fires semi-regularly. Unfortunately Amber is bugged and will often disappear and reappear somewhere else (warping). This can be fatal if you’re close to agro. Soloing problems aside this warping can be useful in RvR even if it is totally random. Amber’s stun can also be handy in RvR giving your group vital time to run down an opponent of flee for their lives.
Ruby Sim – gained at level 7 this pet is your main RvR companion. This one has a 1,500 range cold nuke as it's primary attack and will melee if cornered, albeit poorly. It's also very handy in PvE especially for soem extra nuking power in groups.
Sapphire Sim – gained at level 12 Sapphire is your main melee pet. He has pretty good hitpoints and attack speed however it’s his lifetap proc that makes him the best melee pet in the game. This fires often and when it does you can see the chunk taken out of the mob’s health bar. Free of Amber’s warping this pet is the prefered choice when you need melee pet.
Emerald Sim – at level 20 you get the Emerald Sim. This sim procs a disease (with snare) and poison (DOT) which makes it a viable choice for use in RvR however it doesn’t match up to Sapphire PvE.
Jade Sim – you’re final pet, earned at level 32, is somewhat of a let down. Possessing it’s own damage shield it dies just as easily as the others due to the damage shield being a very low powered one. It has been given a slight boost in a recent patch but again it can’t match up to Sapphire with even Emerald and Amber being better RvR choices.

I would say that the pet spells/procs are about the only thing correct with that.
All pets have a pathing/warping issue. It's not too bad anymore, but the amber doesn't do it more than anything else.
The saphire doesn't lifetap more than the amber stuns, if they have a proc, the proc % is the same across the board.
The ultimate PvE pet is a toss-up between amber and emerald. The reason being is hit points. I used the saphire from time to time, but it starts with less hp than the amber or emerald. Sure it procs a lifetap, but it's not enough. The emerald starts out with high hp, and a cleric can buff it, giving it more hp than the amber, even though an amber has it's own stamina buff.
There's a lot of fluff in the descriptions. A ruby hits for so little, it's "extra nuking power" is equal to crap.
The saphire is not free from warping. And it's proc will not take a chunk out of the hp bar.
"Emerald doesn't match up to saphire in PvE." ROFL!!!!
I think I casted a jade pet once just to see it. That's all I have to say about the jade pet.
Bottom line is, no, it's not correct.

If I was solo/duo/trio, then I used my amber. The stun from the amber has saved me or helped me win so many times, there's no way to count. However, since a few patches ago, it applies a stun immunity.
Because of that immunity, it's not the best to have in 8-man groups. I used the emerald every time. Its disease has a long duration, hits hard, and procs a disease. The sole reason why not to use amber is because you give an immunity to stun. We ran with a reaver and pally. Both would slam to get a tank off me or any other caster.
Often enough, when you disease the tank train, they're far enough away from the healers/casters that the healers/casters aren't affected. And because you have your pet on the healers/casters, the pet is perfect so now you don't have to cast disease on them. The pet is already doing it.

Only time to ever use a ruby pet would prolly be messing around in thid. For main rvr I usually use emerald for the reasons already posted, but sometimes use amber to sick on healers/casters to interrupt and them getting stunned when they try to run away is priceless. I dont think I even have Jade pet on my hotbars. In pve I almost always have amber pet up and on passive to use only as a power pool to recycle to gain power back without having to sit and wait.

I use ruby when running TDs and just have him nuke while I'm nuking.
RvR I usually just have Amber up for a quick cycle. If I plan on actually using the pet I'll raise an emerald.

RvR: I pretty much stick to the Emerald. The disease has been a lot more helpful to me than a short stun (post nerf)
PvE: If I'm fighting red mobs and below I use the Sapphire. It lifetaps all the time which saves youe power. When I am Summon Mastery farming I prefer the jade because it is the biggest

amber - best for recycling power, not bad for soloing because of self con buff
sapph - lifetap is very effective vs yellow mobs and below
emmy - best high end pve pet when buffed, dot and disease nice for rvr
ruby - nice pve pet if you have range to run assist, or for dot kiting
jade - bad hit points, weak ds, kinda pointless pet compared to the others
The sapphire pet is very nice in pve vs low con mobs because it doesn't need much healing, that is what made it superior to the emerald back in the pre-buffbot era. With mediocre buffs, it can deal with 2 or 3 blue (even to the pet) mobs without help. I find the amber pet overrated in pve because while it does have more hits, once you factor in the procs it doesn't have near the dps of the other two so it takes more power to keep it going, which slows me down.
In rvr, I like to run with the ruby or the amber when I'm solo and I tend to use the emmy when grouped. I find I get jumped by archers more than assassins on Bossiney and the ruby is a good interrupt tool because it doesn't have to run all the way to the target first. The ruby has killed many a cocky ranger. I have found that all of the pets, except jade, are situationally great to have in rvr.

amber= small scale rvr
emily= group rvr
ruby= good to put on a door when oil is up so they cant repair

I use the powerful Jade pet for RvR. It's the most useful pet for almost all situations! For example, my Jade pet can..... Ugh...I guess it does nothing.

I use the Sapphy pet all the time in PvE. With no buffbot, and just the FDS, the sapphy can take on several mobs that are yellow con to me, and still come out of it with decent life left.

For rvr, I use Emerald. Having it proc a dot that interrupts on every tick is too nice to pass up, and has won a fight more than once because I toss him at a caster at the beginning of a fight

Just so you know all the pets hit for the same damage and have the same cap (489) with the exception of Emerald who caps for 689, though he swings the slowest (around 3.5s)
Ruby also procs a fire dd in melee and swings the fastest (2.something) so he has the highest DPS though it's not enough of a tradeoff compared to disease/dot and especially because ruby sims can get one shot by nukes (700~ hp, ew)
Oh and Jade pets are good to hide behind when there are archers at a siege
